I started Veggie *What* Now? as part exploration and part creative venture. The name comes from the typical reaction to my diet. As a vegetarian with numerous food allergies and distinct preferences, the most common reaction I heard was: “You are a veggie…what now?”
When I started writing, it was mostly in the third person. After years working on the blog, it became more personal, as these things often do. I now mostly write in the first person, because I can only tell you what *I* do, not necessarily the way things *should* be done.
My experience comes from modifying omnivorous recipes for a vegetarian diet. But, you don’t have to be a vegetarian to enjoy vegetarian food. Meatless Mondays are a great example of this. Rather than re-inventing the wheel, I just modify and properly cite existing recipes to work around my allergies and preferences. I welcome foodies of all stripes.
